This sauce tastes really delicious with salads and pasta, in a sandwich and over cooked vegetables. Just add all below ingredients into a blender and blend until creamy. Keeps for 3 days in refrigerator.
Ingredients:
1/4 cup lemon juice
2 cups cashews (priory soaked for at least 12 hours in cold or room temperature water)
3 whole celery sticks
1/2 cup chopped bell pepper
1/4 cup chopped onion
2 Tbsp fresh parsley, minced
1/4 cup chopped tomato
1 Tbsp minced garlic
