Raw Dairy-Free Sour Cream - (K)

This is my favorite way to substitute dairy-based sour cream, which creates a lot of mucus in our body. This one doesn't taste exactly like sour cream but it has its texture and is actually much tastier when you use it in dishes where normally would use the regular sour cream.

1 1/2 cups raw cashews
2/4 cups raw sunflower seeds
1/4 cup raw almonds
Soak all nuts for at least 12 hours in cold water. Drain water and put seeds into blender
Add 2 cups of any plant-based unsweetened milk (other than coconut)
1/2 tsp salt
1 tsp of fresh lemon juice
Blend all together till smooth and poor into a jar. Cover it with a piece of cloth or a napkin and let sit at room temperature for 3 hours. Cover with lid and place into refrigerator. Keeps 2-3 days.
