Raw Borscht - (P)(A)(K)

I am originally Russian, If you have Russian or Ukrainian friends, you are almost guaranteed heard of our traditional soup called Borscht. It is a stew-like soup with a lot of white cabbage in it, beats (optional), carrots, onions, tomatoes. Some add beans. It is served with sour cream. Today I want to share with you one of RAW versions of Borscht, which will be new even for Russian and Ukrainian people. This soup is ideal for summer hot weather and is full of healthy, unprocessed ingredients which will make you feel good.



What you will need: 3 medium beats or 1 cup beat juice 1 Tbsp minced jalapeno 2 Tbsp minced garlic 1 Tbsp minced ginger 5 cups fresh-squeezed orange juice 1/4 cup chopped green onion 1 cup grated cabbage 1 tsp fresh chopped dill 2 or 3 avocados, cubed 1/2 cup of minced cilantro 1/2 cup grated carrots 1/3 cup olive oil 1/2 fresh squeezed lemon juice 1 tsp salt If you have a juicer, juice the beats into 1 cup of beet juice.You can use pulp in another recipe withing 10 hours if refrigerated or you can freeze it for later times. If you don't have a juicer you can blend beats with the orange juice in a blender and drain it through colander. In a mixing bowl combine the beet juice with all the ingredients. Steer and serve! You can refrigerate it up to 3 days. The colder it is the better it tastes.
