Raw Salad Vinaigrette (P)(A)(C)(K)

Highly nutritious and healthy salad, which tastes really good. For this salad you will need to have already fermented cabbage. The recipe find here.

You will need:

2 medium beets, peeled and cut into 4-5 parts, then warmed up in oven on 125-135 F (50-60 C) for 15 minutes. It shouldn't be cooked but slightly softened. Such beets are easier for digestive system (especially for children's). When ready, cut it into small cubes or long strings.

1 medium raw carrot, peeled and grated on fine grater

1/2 of a large cucumber, peeled and grated on fine grater

1 small zucchini, peeled and grated on fine grater

1/2 avocado, peel and chop finely into smaller cubes

2 Tbsp of raw green peas

5-7 branches of arugula, finely chopped

About 10-15 branches of cilantro, finely chopped

1 large red, orange or yellow bell pepper, cut into smaller squares

1 cup of fermented cabbage, as is or chopped into smaller pieces

1/3 tsp dill seeds

3 Tbsp extra virgin olive oil or 2 Tbsp vegenaise

Combine all vegetables together in a salad bowl.


Delicious and highly nutritious raw vinaigrette is ready!
