A perfect soup for hot summer. It is full of nutrients and is very delicious. Okroshka is a traditional summer soup in Russia, Ukraine, Belarus and other European countries. It is always made with boiled potato, eggs, some kind of meat, radish, cucumbers and other ingredients. It is never boiled and is always served cold.
I would like to offer you a completely raw vegan version of it, as it has a lot more nutrients which are responsible for immunity, anemia, heart health and supporting brain cells. I will give you two ways of making it. You can try both and see which one you like best.

You can't ruin this soup if you are not very accurate in amounts of each veggie but I'll give you numbers just for an idea. Cut into small pieces and slices the following ingredients:
Pink radish - about 2 cups sliced
Cucumbers - 4 small ones or 1 big
Avocado - 1 large or 2 small
Dill, parsley, arugula, chives
Put all together in a big bowl.

In a blender blend together:
Black salt - to taste
Walnuts - handful (Raw nuts and seeds must ALWAYS be soaked for at least 12 hours in cold water before eating, in order to remove poisonous mold Aflatoxin.)
Water - 1 cup
Lemon juice - 1/2 of the fruit
Add it to vegetables and steer. If the soup is too thick add more water.
Another way of making the liquid part is this:
Black Salt - to taste
Water - 1 cup or more if needed
Vegenaise - to taste. The soup should be white and a bit sour
Lemon juice - 1/4 of the fruit
Keeps in refrigerator for a week easy. Enjoy and let food be your medicine....
